Abstract: A new approach of characterization of any porous structure is presented in this paper. The method is based on creating digital images of samples employing common computer scanner and consequent image analysis operations of the scans. The procedure was used for pore size estimation of eleven samples of bread baked from dough with different ratios wheat/rye flour, and therefore with different structures of pores. The whole experiment included several steps, starting with baking the samples in accordance with the standard method, consequent drying the samples and scanning their surfaces finely covered by stamp ink. Following operations were conversion of the images to the black and white form and computer analysis on the basis of Euclidean distance map and Voronoi tessellation. The computed pore area sections were compared to a model set of data obtained from generating random cuts of a sphere with chosen diameter. Finally, to make a comparison, the pore volumes were!
calculated employing stereological equations.
